Established in 2017 by Chef Vincenzo Nicoletta, a seasoned restaurateur from Santa Monica, Vincenzo Trattoria was born out of a desire to bring authentic Italian cuisine to Boise. In early 2025, ownership transitioned to Natasha and Colton, a passionate couple dedicated to preserving the restaurant’s legacy while introducing their own culinary flair. Natasha, the head chef, brings experience from training under Italian chefs and working with James Beard-nominated professionals. Together, they continue the tradition of crafting dishes that evoke the comfort of a home-cooked Italian meal.
