Opened in 2020 by the Peed family—owners of Certified Piedmontese beef—Casa Bovina was designed to showcase Nebraska’s Piedmontese cattle and fine Italian cuisine. Executive Chef Zach Midgett (formerly of The French Laundry) leads a brigade-style kitchen, crafting seasonal à la carte and multi-course tasting menus that often feature house-made pasta, local produce, and exceptional steak cuts .
